Here are two lesser-known but great acting jobs by two of these folks:

Pacino in "Scarecrow" (better than Dustin Hoffman in "Midnight Cowboy" imo)

Nolte in "Affliction." A really complex role, but he nails it.

One of my favorites not listed here: Margo Martindale in everything I've seen her in, but especially "Paris je t'aime" and "Scalene."
