The discrimination didn't necessarily end with conversion. In Cervantes' time (this usage appears in Don Quixote, though the author is mocking rather than reinforcing the prejudice), Jews who converted to Christianity were called "conversos." To proclaim their superior status and to maintain the isolation of the conversos, "non-convert" Christians would refer to themselves as "viejos cristianos."
