Not telling you (or any other parent) how to deal with this issue, but here’s my perspective.

I believe that every human being is on a journey toward compassion in general and compassionate eating specifically (which largely means but isn’t limited to adopting a vegan diet).

Many people never reach that destination, but hey, it’s a journey. Even people who don’t become vegans can become more thoughtful and more compassionate about what they eat and about the impact of our food choices on the planet.

I don’t believe someone can force their journey on another human, no matter how hard they might try — a lesson that some of my fellow vegans would do well to learn.

Whatever you choose to do or not do about the food choices of your daughter, she will be on her own journey toward compassion, at her own pace and with her own rules.

When parents punish (ideally in a compassionate way) a child for poking a puppy in the eye with a stick, they aren’t teaching (forcing) compassion. They are simply and justifiably punishing (providing a negative consequence for) bad behavior.
