I think you're right to emphasize plants as the way to balance our health. Before I became a vegetarian then a vegan, the healthiest course I followed was Szechuan with small amounts of meat (mainly pork, never beef) and a ratio of 3 or 4-1 plants vs. meat. Although I won't say that no carnivorous diet can help restore balance, I now think that any carnivore who doesn't want to go vegan should focus on fatty wild-caught fish / seafood and in small amounts (a diet some people refer to as pescatarian), plus no dairy.

Still, the simplest healthy diet would be entirely plant-based, but the plants chosen would have to use minimal processing before cooking and lots of variety, with a number of other caveats. If I have time, I'll post some further suggestions.
